Slaughterhouse and Transformation Center

To meet severe Industry Standards, Ecolait made significant investments in the restoration of its slaughterhouse and transformation center. The most modern of its kind in North America, the Center is only an example amongst others of Ecolait's cutting edge.

The company carries out its duty to honor specific standards. Post-slaughter, carcasses are cooled at once in a refrigerated warehouse, permanently controlled by a revolutionary system. Carcasses are stored for a forty-eight hour tenderizing period.

Concerned about the respect of strict hygiene rules, several samples are collected daily to prevent risk of contagion or proliferation of microorganisms. Ecolait works in collaboration with veterinarians and inspectors in order to respect standards of the CFIA (Canadian Food Inspection Agency), and the HACCP (Hazard Analysis Critical Control Point). Ecolait guarantees high-quality meat and is proud to produce fresh and tender veal that distinguishes itself by its taste.
